Glazed Strawberry Bread





Have you ever tried a strawberry bread? Well, for me, this is my first time ever! I usually bake banana bread or pumpkin bread. Not strawberry 😁. So when I surfed my favorite recipe blogs and stumbled upon this recipe, I feel excited. You know, I love glaze! And Sally's word sounds so promising! 



When it comes to strawberry, only 3 people would eat it at my house, as my eldest doesn't like strawberry in any forms. But his little bro, he ate everything that tastes good. Haha. He loves strawberry, even when it is sooo tangy, he'll still eat it. But he usually ask for some chocolate sauce to dip in. 

After reading the review, I am soooo going to make the bread. Especially because Sally thinks that the bread is moist. Very important issue for me, I don't enjoy dry texture cake, it makes my throat itchy and makes me want to drink a gallon of water afterwards. 



This bread taste like heaven in my mouth. Burst with flavor. It is a whole different experience for me. I can't stop munching over it, until I realised I haven't take a single photo of the sliced bread 😅. So sorry for the incomplete report. If you are using ripe and sweet strawberry, you might want to cut the sugar amount a little bit. As when you combined the bread with the glaze, it become sweeter. My strawberry is tangy, so I follow the recipe to a T, and very satisfied with it.

Glazed Strawberry Bread

2 cups (250g) all-purpose flour (accurately measured)
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1 large egg, at room temperature
3/4 cup (150g) granulated sugar
1/4 cup (50g) light or dark brown sugar (I am using palm sugar)
1 cup (240ml) buttermilk 
1/3 cup (80ml) vegetable oil
2 teaspoons vanilla extract
1 and 1/2 cups fresh strawberries, rinsed, dried, chopped, and tossed in 1 Tablespoon of flour

GLAZE
1/2 cup (120g) confectioners' sugar
1/2 teaspoon vanilla extract
3-4 Tablespoons (30ml) heavy cream or milk
Directions:

Preheat oven to 180C degrees. Spray a 9x5 loaf pan with nonstick spray. 

Make the bread: In a large bowl, toss the flour, baking soda, salt, and cinnamon together until combined. Set aside. In a medium bowl, whisk the egg, granulated sugar, and brown sugar together until combined. Make sure there are no brown sugar lumps remaining. Whisk in the buttermilk, oil, and vanilla. Slowly pour the wet ingredients into the dry ingredients and gently whisk until there are no more lumps. Try very hard not to overmix, which will result in a tough textured bread. Fold in the strawberries.

Bake the bread for 45 minutes to 1 hour. I cover the bread loosely with aluminum foil after 30 minutes to prevent the top from getting too brown. Poke the center of the bread with a toothpick at 45 minutes. If it comes out clean, the bread is done. If it comes out wet, bake longer. Oven times will vary. Let the bread cool completely before glazing.

Make the glaze: Whisk the confectioners' sugar, vanilla, and cream together until combined and creamy. Drizzle over bread immediately before serving.

Moist Strawberry Muffin

I was away from this blog for quite sometimes. Been busy with this and that.

I believe I don’t need to say too much about muffin. Its easy-peasy! And with the yogurt addition, it makes super moist muffin. The taste is balance between sweet and a little sour from the strawberry. Here in Indonesia, it is difficult to find sweet strawberry. Oh btw, if you don’t have plain yogurt on hand, use buttermilk or uht plain milk.


Dry Ingredients :
1 and ½ cup all purpose flour
1 and ½ tsp baking powder
½ tsp baking soda
½ tsp salt

Wet Ingredients :
½ cup of yogurt/buttermilk/uht plain
¾ cup sugar, please note that the amount of sugar should be based on how sweet/sour  your strawberry. Mine is sour.
1 large egg
½ cup vegetable oil
150-200 gr strawberry, wash clean, pat with kitchen towel and cut into slices or chunks
1 tsp vanilla paste





How to :
1. Heat your oven, 180 Celsius degree 
2. Mix the dry ingredients with whisker
3. In a large bowl, mix well the wet ingredients, and pour the dry ingredients into the wet ingredient. Mix with balloon whisker, don’t mix too much, it will make the muffin  though.
4. Add ¾ strawberry,  fold gently
5. Pour the batter into muffin cups, sprinkle with the rest of the strawberries.
6. Baked for  20-30 minutes, or until a toothpicks inserted comes out clean

Strawberry yoghurt pudding



Yuhuuuuu its been a long time haven't visit my blog. A week is quite a long time, rite? Been busy with this and that and etc. 

I actually bake few stuffs, well, honestly re-bake some of my recipes from the past posts. Just to make sure that it worked really well. Haha that's a silly n dumb excuse. The truth is, me n my hubby looooove the lemon yoghurt cake that I baked few weeks ago n ask me to bake the same cake again for the third times! Need any more prove of how good it taste? :D

So, I guess it is time to move on. I make this pudding as per my son's request for a healthy snack. Tadaaaaa, here it is an easy to make yet delicious n hopefully healthy enough for children (and parents) daily snack : strawberry yoghurt pudding. 

I kinda grab anything that is available on the refrig, you can easily adjust the ingredients as you like. 



1 sachet of agar-agar powder (7gr), you can replace this with gelatin
250gr strawberry yoghurt
10 tbsp of sugar, or depending on how sweet/sour your strawberries
200ml of plain milk
200ml strawberry milk
250ml water
125ml cooking creme
325gr fresh strawberry, cut into chunks and process until smooth with blender
1 egg yolk, lightly beaten

As for the sauce, you can use your favorite vanilla sauce, but this time I make a simple strawberry sauce.

for sauce:
12 strawberries, process until smooth with blender
6 tbsp sweet condensed milk
1 tbsp sugar
water
=> mix all the ingredients together, put it on a stove an bring to the boil. Done

Method :
1. Prepare a pan, use a low heat position on your stove
2. mix the agar-agar powder with the sugar, water, and milk. Stir the mixture until it almost boil. Frequent stirring is needed.
3. Add about 4 tbsp of the mixture to egg yolk, mix well, and then pour it to the rest of the batter and stir well until it boiled 
4. Turn off your stove, wait until all the steam gone. 
5. Add in the yoghurt, creme and strawberry. Mix well.
5. Put it on your jelly moulds and leave it to cool. 

Unmould before eating and pour in the sauce...yummmmmm





My younger son looooove it so much he ate 3 moulds of the pudding at a time! as my eldest, he never likes anything with strawberry but he surprisingly managed to finish his first mould. Good job :D

Strawberry ice cream



wheeeww u dah lama gak intip2 blog nih, baking sih tetep, tp waktunya lg minim bgt untuk tulis2. Tiap malem rencana setelah anak2 bobo mau apdet, eeeeehhhhhh selaluuuu ketiduran pas boboin anak2.wkwkwkwkw, penyakit emak2 bgt ya:P 

Bikin ice cream ini pun,sebenernya udah lama, ada 2 bln lalu mungkin, hihihihihihi.Telat amat ya postingnya,udah keburu kesalip2 sama yg lain deh. 

Ini resep eskrim ala saya, tanpa telur. Kok ya masih gak bisa ya,makan yg telurnya gak mateng2 amat. Jadi ingredients-nya jg menebak2, sambil diicip2 yg penting enak, hahahaha.

berikut ya resepnya :
250gr stroberi segar yg matang
250ml susu uht plain 
250ml whip cream
gula secukupnya

Semua bahan diblender jadi 1,bekukan. Setiap mengeras, blender lg.Saya lakukan 4x.

Hasilnya memang tdk selembut yg dengan ice cream maker atau dengan telur. Tp buat saya dan anak2, enaaak. Adek nambah lagi dan lagi. Mas Bayu yg biasanya ogah bgt sama stroberi, ikutan makan juga. Alhamdulillah, senang kalo apresiasi para customer-nya bagus :D
