Tuna Sandwich with Cheesy Mashed Egg





This is going to be a quick post, as I believe everyone can make their own tuna sandwich. The special thing about this sandwich is the cheesy mashed egg. That's it. I am adding an extra value to a simple and humble ordinary tuna sandwich.




It makes the texture more creamy, and instead of only  mayonnaise, I am adding some cheese spread for the mashed egg. Orgasmic!

Ingredients :
6 slices of plain bread/whole wheat bread
Lettuce leaf
Kyuri (Japanese cucumber, or any kind of cucumber)
Sliced tomato (I don't have tomato on my refrig, so this time I skip it)
mayonnaise
chili/tomato sauce

Ingredients for Tuna Melt, mix well :
4 tbsp of canned tuna
1-2 tbsp mayonnaise
ground black pepper

Ingredients for Cheesy Mashed Egg, mix well:
2 hard-boiled eggs, mashed (until the texture is chunky, not too mushy like mashed potato)
1 tbsp mayonnaise
2 tbsp cheese spread
ground black pepper

How To :
1. Toast the bread, spread the mayonnaise and chili sauce. 
2. On one slice of toast, place the lettuce and tuna , cover with a slice of toast. Spread again with mayonnaise or sauce. Place the sliced cucumber and spread the cheesy mashed egg, top it with sliced tomato. Top with last slice of bread. Repeat the process for one more set of sandwich.

Buttermilk Chocolate Pancake




I don't need to say anything about this chocolate goodness, bet all of you have your favorite pancake recipe. It is a treat for my family, a comfort food, simple dessert. Yupe, we eat pancake anytime we want, not only during breakfast.

This pancake is fluffy and soft, I often use the same batter to make waffle, saves time! Use whatever topping that you like. My boy's favorite is vanilla ice cream, chocolate sauce+choco chips (so predictable), and toast almond.




Ingredients :
Dry ingredients 
2 cups of all purpose flour
2 1/2 - 3 tbsp cocoa powder
5 tbsp sugar
3 tsp baking powder
1/2 sdt salt

Wet ingredients
1 1/2 cup buttermilk
3 tbsp cooking oil
3 tbsp butter, melted
2 eggs

How to :
1. Sift flour and chocolate, mix well with other dry ingredients. Set aside
2. In a separate bowl, mix buttermilk, egg, melted butter and oil.
3. Add in the dry ingredients into wet ingredients. Do not overmix or your pancake will be tough
4. Heat your pancake pan, use low heat. Drop one or two spoonfull of the batter. Leave it until you see bubbles on the surface. Flip and cook for another 1 minute.
5. Serve with your favorite topping

Pancake with Banana and Melted Dulce de Leche



In my family, pancake is one of my boys favorite breakfast. Errrr not just breakfast actually, they can eat it anytime they want. As brunch, lunch or dinner. Here I'm sharing the original pancake which have such a humble ingredients, yet taste sooo good. Unlike any other recipes that requires buttermilk or self raising flour or separate mixer etc, this one is sooo simple that you can prepare it in such a short time. 

Making the batter is very easy, it took me about 5 minutes to prepare. It was the cooking part that took longer time. I'm using 1 of 12cm pan, and of course it took ages to finish! So what I do is, the 12cm pancake is for the boys, and I'm also using a 18cm pan for me and hubby. Finish faster! For family of 4, 1 recipe is not enough to feed all the hungry mouths, so I always doubled it up :D







Pancake

1 cup of all purpose flour (130gr)
1 1/2 tsp baking powder
1/4 tsp salt
2 tbsp sugar (i'm using 3 tbsp)
1 large egg, lightly beaten
1 cup (240ml) plain milk
2 tbsp unsalted butter

- In a large bowl whisk together the flour, baking powder, salt and sugar. 
- In a separate bowl whisk together the egg, milk, and melted butter. 
- Pour in the egg mixture, all at once, and stir (with a rubber spatula or balloon whisker) until just combined. 
- The batter should have some small lumps. (Do not over mix the batter or the pancakes will be tough.)

Heat your frying pan, lightly brush the pan with butter. Pour in the mixture to your preheated pan. Adjust the thickness of the pancake according to your own liking. For evenly browned pancake as shown in the pics, do not brush the pan with butter and use small heat only!
When the surface of the batter has start to bubbly and the bottom of the pancake has turned golden brown, turn it over. Cook again for another 1 minute.



You can use your favorite topping such as maple syrup, jams, powder sugar or fruits. This time I'm using banana and melted dulce de leche. To make the dulce easy to be poured, cook your dulce with a pan and add fresh milk. Continuous stirring until the right texture. Click this link for more infos about dulce de leche. Re-post Banana Crumbs Muffin

I actually make this muffin for many many times. Simply because I like it! My boys adores it too. I usually bake this with palm sugar streusel/crumbs, but this time I use brown sugar, and turn out to be lovely  ^_^

After my second batch of banana muffin, I was thinking to re-post and re-shoot it, need to practice to take better photos :)



Here is the recipe :

1 1/2 cup all purpose flour
1 teaspoon baking soda   (i use 3/4 teaspoon)
1 teaspoon baking powder (i use 1/2 teaspoon)
1/2 teaspoon salt
3 bananas, mashed
3/4 cup sugar (i use 1/2cup)
1 egg, lightly beaten
1/3 cup butter, melted
and I also add 50ml of fresh milk



for the streusel/crumbs:
1/3 cup of brown sugar 
1 tablespoon all purpose flour
1/8 teaspoon of cinnamon
1 tablespoon of cold butter
=mix together 


How to:
1. In a bowl,combine flour, baking soda,baking powder and salt. Set aside
2. mix well the melted butter, milk, sugar, egg and mashed banana
3. Pour in the wet ingredientsto dry ingredients and stir until just combine, do not overmix.
4. Fill greased muffin cups three-fourths full. Sprinkle the streusel on top
5. Bake at 25-30 minutes, or until the picks inserted comes out clean.



The muffins taste great, as always. It's moist and the crumbs is so good, I think next time I will mix the palm sugar+brown sugar. As palm sugar has a very specific smell that is just perfect with cinnamon.

French toast+banana saus dulce




Selamat pagiiiiiii, hari ini kebagian nganter Bayu ke sekolah. Karena mobil lagi masuk bengkel, hubby jadi gak bisa anter. Jadi pagi2 kena angin dingin karena harus naik ojek ^^.

Pulang2 si adek nunggu di depan rumah, udah bangun rupanya. Langsung nubruk minta gendong sambil senyum2 manis, hihihihihi, ditinggal sebentar aja kangen ya, dek? Mama emang ngangenin ya :D Menurut papa, tadi pas bangun adek keliling2 rumah, cari2 mama. Trus karena gak ketemu, duduk bengong di lantai, trus diajak papa ke depan.

Pagi ini memang niat buat french toast, simple bgt, dan favorit semua. Jadi gak perlu bikin 2 jenis sarapan, kalo nasgor, bayu gak doyan. Yg ini serumah suka semua :) Anak2 malah seringkali nyemilin french toast jg buat sore2, hahahha
Bikinnya gampaaaang bgt. Bahan yg diperlukan cuma susu, telur, kayu manis bubuk dan gula halus.

the ingredients :
1. 250ml susu
2. 3 telur
3. 1sdt kayu manis bubuk
4. 2 sdm gula halus, gula pasir jg bisa
aduk rata semua bahan dengan baloon whisker

Bahan rendaman ini cukup untuk 1 kotak roti tawar, saya pake roti tawar bundar merk Lauw yg lwt depan rumah, krn rotinya tebel2, enak buat toast.

cara membuat :
- roti dicelup satu persatu di adonan celupan, tunggu bbrp saat, lalu dibalik
- panaskan wajan anti lengket, taruh butter sktr 1/2 sdt, tunggu sampai wajan panas dan butter berbuih
- masukkan roti, masak sampai kecoklatan, balik, tunggu bbrp saat. Angkat
- tambahkan butter lg bila kurang, ulangi prosesnya hingga roti habis.

Pagi ini saya kasih tambahan topping pisang iris dan saus dulce. Rasanya? nikmaaaaaaat banget :D

savory pancake with bolognese sauce



resep ini saya dapat dari booklet kraft, bread n breakfast. Hanya topping-nya saya modifikasi, karena kebetulan mmg lagi ada saus bolognese, kan malah jadi lbh enak:D

Resep pancake :

1 butir telur,putihnya dikocok pisah sampai kaku
150ml air
100gr terigu
2 pinch of salt (aslinya ngga pake)
keju parut, sesuai selera

semua bahan dicampur, terakhir masukan putih telur yg dikocok kaku.aduk rata.
panaskan wajan anti lengket dgn sedikit margarine/butter. tuang adonan,masak dengan api kecil sampe kekuningan. Balik adonan, masak hingga matang. untuk toppingnya, saus bolognese yg sdh ada,saya tambahkan irisan nanas, jamur dan paprika,lalu dimasak lagi. Dan saya juga membuat salad dari kol ungu, tomat ceri yg dicampur dgn dressing seadanya, dari mayonaise ditambah garam dan lada :)

Resep ini, jadi 1pancake tebal ukuran 18cm, mustinya saya pake wajan yg kecil biar dapet banyak ya. Overall, saya lebih suka tekstur pancake yg biasa saya buat. Walaupun yg ini mungkin lbh sehat krn tidak menggunakan baking powder. Tp pancake yg empyuk dan fluffy tetep nomer satu di hati saya *lebay*. Cukup lumayan, untuk variasi sarapan sehat :)

Banana streusel muffin




Resep ini diambil dari sini dan menjadi muffin pisang favorit di keluarga kami.

Bahan yang diperlukan : 
1/2 cup terigu 
1 sdt baking soda (saya pakai 3/4 sdt)
1 sdt baking powder (saya hanya pakai 1/2 sdt)
1/2 sdt garam
3 buah pisang, dilumat
3/4 cup gula (saya hanya 1/2cup)
1 egg, kocok lepas
1/3 cup unsalted butter, dicairkan
dan saya menambahkan 50ml susu cair

untuk streusel : 
1/3 cup of brown sugar (saya pake palm sugar)
1 sdm tepung terigu
1/8 tsp of cinnamon
1 sdm of butter dingin
=campur semua hingga rata, masukan lemari es



Cara pembuatan : 

1. Di mangkok, campur tepung, baking soda, baking powder dan garam. Sisihkan
2. Campur rata mentega leleh, gula, telur, pisang lumat dan susu 
3. Campurkan adonan basah ke adonan kering. Aduk balik, jgn terlalu banyak diaduk nanti muffin keras
4. Isi muffin cup sampai 3/4 penuh, lalu taburi streusel
5. Panggang dengan oven yg sudah dipanasi terlebih dahulu dengan suhu 180dercel, sekitar 25-30 menit. Lakukan tes tusuk.

muffin ini lembut dan wangiiiii banget, streuselnya jg yummmmmy banget. Kalo ditaroh di loyang loaf bisa jadi banana bread sepertinya :D

Puding roti almond+kismis





another breakfast story :d eh sebenernya, another attempt to save the roti tawar sih, hahahah. Besok expired, tp msh ada 4 lembar. Hadooooh PR bener deh kalo kyk gini. Jadi harus mikir, mau dibikin apa ya, yg juga disuka sama penghuni rumah. Untuk ini, nama Bayu terpaksa di skip, dia mah roti cuma mau dimakan pake selai coklat aja dan meses. Bentuk lain? gak bakal mau sentuh *sigh*

duluuu  pernah buat pudding roti, ala ngasal, gak pake resep. Jadinya? enak tapi manissss banget. hehehe, namanya juga asal. Kali ini? ya tetep asal juga, tp saya kira2 bgt ngasih gulanya. Kapok sama yg dulu soalnya! :D

Berikut ya resepnya, gak ada link kemana2 karena ini hasil saya mengarang indah di dapur.

4 lembar roti tawar
100ml creme
200ml susu uht plain
1 sdm unsalted butter, dilelehkan
2 butir telur
1 kuning telur
3 sdm gula pasir
sejumput garam
kismis dan almond slice sesuai selera
sedikit kayu manis bubuk untuk taburan

caranya :
1. Potong2 roti tawar, sktr 3x3cm (kalo saya karena males  biasanya dicabik2 aja :p), tata sebagian di pyrex/ramekin. 
2. Campur susu, kreme, gula, melted butter, garam, telur, aduk dgn balloon whisker sampai rata siramkan sebagian ke roti.
3. Taburi dengan kismis
4. Tata lg sebagian dari roti tawar, siramkan sisa campuran susu
5. Taburi kismis dan almond slice, dan kayumanis bubuk. Diamkan sampai menyerap

Nyalakan oven api sedang, tunggu sampai benar2 panas. Panggang sekitar 30-35mnt.
Rasanya? Kali ini gak kemanisan *joged-joged*. Passs manisnya, enyak, creamy bgt dan lembut di mulut. Sekali makan, Satria langsung menghabiskan 1/3 pyrex, hahaha. Alhamdulillah pada suka. Monggo dicoba :D

what a sweet morning



Tiap bangun pagi,saya pasti nyisihin waktu untuk bengong sejenak (bukan di toilet loh ya). Bingung mikirin mau sarapan apa. Karena bolak-balik lontong sayur, nasi uduk, bubur ayam (yg semua tinggal tepok ajah) or pancake dan roti isi. Boseeeeeen. Dan saya rasa semua jg merasa gitu. Buktinya, roti tawar teronggok begitu aja gak disentuh. Padahal besok expired, huwwwwaaaaaa. Harus segera diolah sebelum jadi mubazir.

Akhirnya brosing2 nyari ide untuk mengolah roti tawar. Dan mata sayapun terpaku sama resep ini. Omg, kliatannya enak bener (walopun looks very sugary n of course, fatty). Tp saya pikir, self indulgence sesekali gpp lah *cari2 alesan*.

Pas malemnya, saya udah siapin semua bahan2, dan sudah di marinate jg para rotinya (dari sumber menyarankan begitu), sepertinya hal ini disarankan supaya roti tetap moist walopun melalui proses pemanggangan *french toast yg ngga di toast*.

Ini resepnya ya, source-nya dari Bakerella, tp saya buat pake perkiraan sendiri, krn aslinya bener2 boros gula.

Susu+krim 200ml
gula 4sdm
kayu manis bubuk 1sdt
telur 2

Aduk rata dengan whisker


Panaskan oven
1. Roti dipotong dan dicelup ke adonan susu sampai benar2 basah dan menyerap, angkat masukkan ke pinggan tahan panas dan disusun (saya pakai masing2 3 potong roti yg sudah dibelah. 
2. Di tengah2 tiap potongan roti, selipkan buah pisang yg sudah diiris2 koin (tebalnya sesuai selera)
3.Taburi atasnya dengan streusel :saya membuatnya dari 1sdm butter, 3sdm gula palem, 1sdm susu bubuk
4. Oven sekitar 35mnt


Hasilnya? omg, enaaaak dan manisssss. Setelah masuk refrig, rasanya mnrt saya malah makin enak. Lumayan buat variasi sarapan, walopun baiknya ngga sering2 :p
