Chococino pudding (Chocolate cappuccino pudding)

I was in the mood to make pudding the other day, so I started to run over my drawer and see what is left and can be use to make pudding. I only found chocolate powder. Well, at least my son will love it. The eldest love anything with chocolate. But its kinda boring to have "just" chocolate pudding, so a twist with cappuccino, perhaps?

Recipe :
1 sachet of agar-agar powder (7gr)
1/2 can of sweet condensed milk
500ml plain milk
500ml water
1 egg yolk
1 tsp of maizena
3 full tablespoon of chocolate powder

2 sachet of cappuccino instant powder
2 tbsp of sugar

how to :
1. Prepare a pan, use a low heat position on your stove
2. mix the agar-agar powder with the sugar, water, and milk. Stir the mixture until it almost boil. Frequent stirring is needed.
3. Add about 4 tbsp of the mixture to egg yolk, mix well, and then pour it to the rest of the batter and stir well until it comes to the boiled, do the same thing to the maizena

4. divide the mixture into two same amount of liquid. Add about 4 spoon of liquid into chocolate powder, mix well. Pour it to the liquid using fine strainer.
5. Repeat stage 4 to the other half of the liquid, add the cappuccino powder.
6. Add 2 tbsp of sugar to the chocolate pudding mixture. (or you can skip the sugar if you like it more bitter and chocolatey). No need to add sugar to the cappuccino pudding mixture as the instant powder itself already contains sugar.
5. Turn off your stove, wait until all the steam gone.
6. Pour some of the cappuccino batter to your mold, wait until it has thin skin on the surface then add the chocolate mixture carefully. Repeat process until done. Let cool completely. Refrigerate and serve cool.

As for the taste, I think they are yummy ! the cappuccino pudding taste a bit like toffee :) which is a good thing :D

Double Chocolate Muffin (to die for)

I've been trying so many chocomuffin recipes. Creaming the butter method, reguler with melted butter method, custard method and so on. But this one is the best! Choco muffin from heaven, to die for. This is exactly what I'm looking for the whole time. Not too sweet, very chocolatey due to the use of quite alot of choco powder. Yep, the batter doesn't required melted dark cooking chocolate! Which I think it makes the muffin taste so damn good.

I adores chocolate powder on muffins and pudding :D Not that I don't enjoy melted dark cooking chocolate, they are too one of my favorite indulgent. But on muffins, powder taste stronger and more chocolatey than dcc :D The recipe also calls for dcc, chopped and toss to the batter. Yummmmmm can you imagine while the muffin still hot, all the dcc are melted? *drooling* and for more, some of the chopped dcc is use as a topping. Holy chocolate!

 The Recipe :

300 g all purpose flour
80 g cocoa powder
1 tbsp baking powder
1/2 tsp baking soda
1/4 tsp salt
250 g granulated sugar
100 g butter, melted
250 ml buttermilk
2 large eggs
150 g dark chocolate (70%), coarsely chopped

Heat oven to 180 degree celcius. Prepare a cupcake pan with 12 muffin liners. Mix flour, cocoa powder, baking powder, baking soda and salt in bowl. Set aside. Mix sugar, butter, buttermilk and eggs in a large bowl. Add dry ingredients to wet ingredients and mix until just combined. Stir in chocolate, but save 1/4 of the chocolate to put on top of muffins. Divide batter between 12 liners, filling them completely full. Sprinkle with remaining chocolate pieces. Bake for 25-30 minutes or until a tooth picks inserted comes out almost clean.

Vanilla Cinnamon with Stuffed Nutella Muffin

Well, who doesn't like nutella? It ooey-gooey-goodness is just irresistible. I want it for my plain bread, my toast, my pancake, my pound cake and any other special treat. I mean, what can go wrong with nutella? Well there is one, my weight of course. But let's not talk about that ultra-sensitive issue, here I'm gonna share the ultimate treat for breakfast or brunch.

It surprisingly not too sweet (or is it my sweet tooth has it own judgement?), and of course smells wonderful! Thanks heaven for the smell of vanilla and cinnamon. They paired perfectly. And when you add a teaspoon of nutella. Oooh I'm in heaven :D

Ingredients:

MUFFINS
75g unsalted butter, softened to room temperature
100g granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup (120ml) milk
1 and 1/2 cups all purpose flour
1 and 1/2 teaspoon of baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
6 teaspoons Nutella

CINNAMON-SUGAR TOPPING

1/4 cup (50g) granulated sugar
2 teaspoons cinnamon
3 Tablespoons (45g) unsalted butter

Directions:
- Preheat oven to 180degree celcius. Spray muffin pan with cooking spray and set aside.
- In a large bowl of an electric or stand mixer, cream butter and sugar together on medium speed. Mix in the egg, vanilla extract, and milk. Gently stir in flour, baking powder, -Cinnamon, and salt. Do not overmix - stir until  just combined.
- Spoon 1 tablespoon of batter into muffin pan, add 1 teaspoon of Nutella in the center and spoon another tablespoon of batter on top. If the muffin tins are completely full, that is ok.
- Bake about 30minutes.. Allow muffins to cool for about 5 minutes.

While the muffins are cooling, make the cinnamon-sugar topping. Melt the butter. In a separate small bowl, stir together the sugar and cinnamon. Dip the top of each muffin into the melted butter and dip into the cinnamon-sugar mixture. Swirl them around in the cinnamon-sugar a bit to make sure you get a thick coating. Set upright on cooling rack.

Brownie cheesecake

I know I know. Such a late and boring recipe. I believe almost every foodblogger once, twice, thrice baked this famous brownie. I gotta say I choose David Lebovitz recipe because it use less egg :D How I love that! and like any other David's brownie recipe, it doesn't required baking powder. Means healthier at all cause. As for the taste, they're scrumptious! I enjoy it the most when cold. Need any more explanation? brownie....chocolate and creamcheese? Perfect combo. Though my marble was quite disastrous, haha. Blame it on the little pair of hands who wants to help mommy on the swirling :D Anyway, he's so happy that I let him do the swirl. So, tho its look pretty awful, I admire my little boy's spirit. He always take part almost everytime I bake something :)

Matcha Green Tea Pudding

Finally, its my first post in 2014! Where have I been? Hahahahha, just being lazy, thats all :D (I believe that's normal,no?)

Anyway, I actually bake many things during the period, well of course only some of them that was captured by my camera :P And this pudding is one of them. Why pudding? Why matcha green tea (again?)?

Without a doubt, I will say "matcha green tea" loudly, whenever someone asks me about what flavour I like the most. Its simply intoxicate me (in a good way, of course). It has this unique bitter-sweet smell. I bet I can come up with another green tea recipes episode! They are good for baking, drinks and desserts. I've made matcha drink several times, but never got the chance to take proper photos of them.

So, now I'm going to share the recipe of matcha green tea pudding which taste......oooh heavenly. I'm using evaporated milk and uht milk in this recipe. However you can omit the evaporated and use all uht milk.

For more green tea recipes, klik this link for the yummmmmy green tea cookie, this link for the moist and addictive steamed green tea blondies a.k.a steamed white brownies, and this link for the unique green tea muffin with cream cheese inside :)

what you need :

1 sachet of agar-agar powder (7gr)
125gr sugar
1 can of evaporated milk
250ml plain uht milk
water, until all combined, total of 1 L liquid
1 egg yolk
2 tsp of maizena
4,5 tsp of matcha green tea powder

how to :
4. repeat step 3, and dissolved the matcha powder with some of the liquid. Do not put the matcha powder directly to the pan, you will find difficulties to make them dissolved!
use fine strainer when put in the matcha green tea to the pan.
5. Turn off your stove, wait until all the steam gone.
6. Strain into mold, and let cool completely. Refrigerate and serve cool.

For this pudding, you can use your favorite homemade vanilla sauce or store-bought ones. Or else, when you're feeling lazy or troubled yourself to make your own sauce, you can add sweet condensed milk as a the sauce :D

Savory Bread Pudding

Whenever I crave for something sweet but I don't have much time, bread pudding is always become my top of the list. Its easy-peasy, only take less than 5 mins to prepare, and taste good. Good enough to stop my craving. I make so many variations with bread pudding. Mostly the toppings. Pretty simple, eh? Raisins n almond, triple choco, banana choco chips, banana almonds, apple raisin and many more combinations.

But this time I'm craving for something salty, like chips that aren't healthy and full of msg :D so to avoid me for munching over a big bag of salty potato chips, I decided to make savory bread pudding. This idea came after doing a refrig cleaning and found out that there are some frozen food that is only a single serving each. So I use 1 piece of smoked beef, 1 piece of smoked chicken, cut them nicely, add small cubes of quick melt cheese and some mushrooms. And add the milk+cream+egg mixture. Voila! Savory bread pudding, at your service! So by changing the sugar into salt n pepper, turn out to be grrrreat. It taste like oven baked macaroni :D yeayyy for me!

So here's the recipe :
3 slice of bread
1 smoked beef
1 smoked chicken
Quick melt cheese, cut into small cubes, as many as u like. Note that the more you use it, the more gooey it will be (you can also use diced cheddar cheese, it will taste as good, only less gooey)
6 pcs canned champignon mushroom, sliced

Mix together with balloon whisker :
120ml cream
250ml plain milk
3/4 tsp salt
Pepper to taste
pinch of grated nutmeg
2 eggs
2 tbsp of melted butter

For topping :
Grated cheddar cheese
Chopped celery

HOW TO :

Cut the bread into cubes about 2*2cm. Spread it on your buttered baking pan
Spread the smoked beef+chicken+quick melt cheese+mushroom, and then pour the milk mixture
Add grated cheddar cheese and chopped celery
Baked for about 30-35 minutes, 175deg, until a toothpicks inserted comes out clean

Steamed Matcha Green Tea Blondies

Heyyya all, been a while since my last post. Been lazy and busy too :P

It all started when I got sick for about 3 weeks. On and off kind of sickness :( Of course it changes my entire activity. I bake a few times, but its mostly simple things that I've been doing many times. So I don't have to feel guilty not to take shots or post the thing I bake.

I loooooove matcha green tea. I love how it smells. And I believe many things can be created with this powder. Until now, I make a few recipe with this magic powder, and many things in my plan is about to come soon :D Check out this recipe of Matcha Green Tea Cookie.

This matcha blondies is a darling in our family. I actually make this 3 times in 2 weeks! However I only got a chance to take photos on my 3rd trial! The 1st and 2nd, all gone before I even spare the time to take some shots. The blondies smells wonderful to my nose. Addictive it is. It's soft and moist and very fragrant. My younger son eats 4-5 pieces in a row. He keeps munching over the blondies until he feels enough!

The recipe is the same as my previous Steamed pandan blondies. This time I use green tea powder instead of pandan paste.
