Vanilla Muffin with Nutella Swirl




I have made this muffin many many times, I lost count. Rarely got the chance to take proper photos of this sugar darling. When I finally took the photos, I was struck by a truck full of laziness. All this pics were taken ages ago...kidding :D But it is quite old tho. Based on my investigation, hehe...it was taken on February 15....almost 5 months ago. Quite old, eh?




About the muffin....I bet some of you knows how much I adore, fancy or love muffins. Some of you might get pretty bored with another muffin recipes :D But this one, my friends. Is one of my top of the list muffin! As always, easy to make, simple ingredients, and taste really really good. Ideal for breakfast, brunch, your kids lunch box, and also perfect for teatime partner. However you want it. 




It is quite similar to the Vanilla muffin with stuffed Nutella that I once made, adding some twist with this one as I like my muffins to stay soft and a bit moist. 



INGREDIENTS :

50gr unsalted butter, softened to room temperature
30gr oil (I use canola)
100g granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup (120ml) milk
1 and 1/2 cups all purpose flour
1 and 1/2 teaspoon of baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
6 teaspoons Nutella

Directions:

- Preheat oven to 180degree celcius. Spray muffin pan with cooking spray and set aside.
- In a large bowl of an electric or stand mixer, cream butter and sugar together on medium speed. 
- Add in the oil. Mix in the egg, vanilla extract, and milk. Gently stir in flour, baking powder, Cinnamon, and salt. Do not overmix - stir until  just combined.
- Spoon the batter into your muffin pan/ cups until almost full. Add a teaspoon of nutella,make the swirl with fork or tooth picks.
- Bake about 20-25 minutes.. Allow muffins to cool for about 5 minutes.
