yoghurt banana cake





Bbrp waktu lalu, mas tukang sayur langganan bawa pisang ambon yg montok2 bgt, sayangnya saya lupa cek, ternyata pisangnya semua rata matang. Jadi baru dimakan 3 buah, yg lainnya udah kecoklatan semua, kulit berbintik2....tanda kalo pisang sudah overripe. Sebenernya katanya malah bgs untuk dikonsumsi, krn semakin tinggi angka antioksidannya *cmiiw. Bayu sempet mau ambil pisangnya, tp pas liat udah penuh bintik2, dia gak mau. Jadilah 2 pisang nganggur gak jelas nasibnya.


Saya pikir2, harus dibikin sesuatu nih, krn sayang banget kalo dibuang. Yg saya tau, pisang yg muateng sangat ya cucoknya untuk dibuat cake pisang. Enak malah katanya jadi lbh terasa pisangnya nanti. Akhirnya buka lappie dan cari2 resep. Nemu resep yg menarik bgt (mnrt saya) dari sini. Liat testinya kok semua blg enak banget, jadi penasaran :D

Ingredients
  • 1 stick of salted butter (saya pakai 100gr unsalted butter)
  • 1/2 cup sugar (saya pakai 120gr, kemanisan, next time 100gr aja cukup)
  • 1 egg
  • 2 large ripened bananas mashed ( or 2.5 small bananas)
  • 1 tsp. vanilla
  • 1 cup flour
  • 1 tsp. baking soda
  • 2 Tbl. cocoa powder
  • 1/2 cup of sour cream (ngga punya sour cream, saya ganti yoghurt plain)
  • 1 cup of mini chocolate chips (saya pake hanya 1/2 cup, n its sweet enough)
Instructions
  1. Preheat over to 350 degrees.
  2. Lightly grease a 9×5 loaf pan, or 2 mini pans with non-stick spray.
  3. In a large bowl, cream butter and sugar together. Stir in egg, mashed bananas, sour cream, and vanilla until well blended.
  4. Add baking soda, cocoa, and flour.
  5. Mix everything until well incorporated (about 3 minutes in a Kitchenaid mixer).
  6. Add chocolate chips and nuts (if applicable).
  7. Pour batter into loaf pan(s) and bake for 50 minutes – 1 hr.
  8. Insert a tooth pick into the center of the loaf and check to see if it comes out clean when you pull it out.
  9. Remove from heat and allow bread to rest in the loaf pan for 10 minutes.
  10. Invert the loaf pans onto a cooling rack. Enjoy warm or cold.

Nah, ada bbrp perubahan yg saya lakukan, tp mmg aseli ini cake enak bgt, very rich n moist, pisangnya dominan, coklatnya juga ! jadi a truly special treat for banana n chocolate lover. Dimakan dingin, enak...anget? enak juga. This recipe is definately a keeper ;) will make another batch, soon :D
